I understand that if you use PHP code you can stop rival companies looking at your keywords.
Can anyone tell me if the search engines can access them if they are hidden in this way. |

I don't really get what you're saying here.
It seems you're referring to cloaking techniques that would be used to hide keywords to your business competitors and then still show them to bots.
The problem here is who would you cloak ? Business rivals or bots ?
If you only modify your content cloaking your rivals network, then, it's possible Google will not blacklist your web sites, but this is hard to do as you'd need the full ip list used by those.
But this will never be 100%, unless you cloak every ip but the bot's, which would be cloaking bots
The over way around, cloaking bots, is safer for your rivals eyes, but a lot more dangerous for search engines. You take great risk to be blacklisted.
And since most of the time, it would be your rival to spam report, I'd say, it's just to risky to try such thing.
Because one way or the other your rival will be the one to be able to find out and spam report the trick.
