For some reason, any time I create a folder with a MODx file in it (IE Mods/install.xml or templates/SubSilver2.xml) it will ALWAYS take me to my RSS feed page.

I tried to search but with lack of knowledge on what to search for, always came up empty handed. If it has been asked, then sorry, and if you could please point me in the right direct.

Post your .htaccess. Something is matching *.xml and sending it to rss.php / gymrss.php.
